Ingredients

  • 1 pound boneless skinless chicken breasts, sliced into thin strips
  • Mike’s SPG all-purpose seasoning
  • 2 TBSP Olive Oil Marketplace Parmesan Garlic EVOO
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1/3 cup Olive Oil Marketplace White Lemon Balsamic
  • 1/2 cup butter
  • 2 TBSP fresh parsley, chopped
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 cloves garlic, minced
  • 1/4 cup parmesan cheese, grated
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Season the chicken strips with Mike’s SPG.
  2. Heat olive oil in a large cast iron skillet over medium-high heat.
  3. Add seasoned chicken strips and cook for 3-4 minutes per side until golden brown and cooked through.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  6. Pour in chicken broth and Lemon Balsamic, scraping up browned bits from the bottom.
  7. Simmer for 3-4 minutes to reduce the liquid slightly.
  8. Stir in butter until melted and well combined.
  9. Return cooked chicken to the skillet, tossing to coat in sauce.
  10. Sprinkle chopped parsley over the chicken before serving.
  11. For the rice, combine rice, chicken broth, and minced garlic in a medium saucepan.
  12. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 15-20 minutes until tender and liquid is absorbed.
  13. Remove from heat and stir in grated parmesan cheese.
  14. Season rice with salt and pepper to taste.
  15. To serve, divide garlic parmesan rice among plates, top with chicken scampi, spoon sauce over, garnish with parsley, and enjoy immediately.
