- 1 pound boneless skinless chicken breasts, sliced into thin strips
- Mike’s SPG all-purpose seasoning
- 2 TBSP Olive Oil Marketplace Parmesan Garlic EVOO
- 6 cloves garlic, minced
- 1 cup chicken broth
- 1/3 cup Olive Oil Marketplace White Lemon Balsamic
- 1/2 cup butter
- 2 TBSP fresh parsley, chopped
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 cloves garlic, minced
- 1/4 cup parmesan cheese, grated
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Season the chicken strips with Mike’s SPG.
- Heat olive oil in a large cast iron skillet over medium-high heat.
- Add seasoned chicken strips and cook for 3-4 minutes per side until golden brown and cooked through.
- Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in chicken broth and Lemon Balsamic, scraping up browned bits from the bottom.
- Simmer for 3-4 minutes to reduce the liquid slightly.
- Stir in butter until melted and well combined.
- Return cooked chicken to the skillet, tossing to coat in sauce.
- Sprinkle chopped parsley over the chicken before serving.
- For the rice, combine rice, chicken broth, and minced garlic in a medium saucepan.
- Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 15-20 minutes until tender and liquid is absorbed.
- Remove from heat and stir in grated parmesan cheese.
- Season rice with salt and pepper to taste.
- To serve, divide garlic parmesan rice among plates, top with chicken scampi, spoon sauce over, garnish with parsley, and enjoy immediately.
