- 1 pound boneless skinless chicken breasts, sliced into thin strips
- Mike’s SPG all-purpose seasoning, to taste
- 2 TBSP Olive Oil Marketplace Parmesan Garlic EVOO
- 6 cloves garlic, minced
- 1 cup chicken broth
- 1/3 cup Olive Oil Marketplace White Lemon Balsamic
- 1/2 cup butter
- 2 TBSP fresh parsley, chopped
- 1 cup long-grain white rice
- 2 cups chicken broth (for rice)
- 2 cloves garlic, minced (for rice)
- 1/4 cup Parmesan cheese, grated
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Season chicken strips with Mike’s SPG seasoning.
- In a large cast iron skillet, heat 2 TBSP olive oil over medium-high heat.
- Add seasoned chicken and cook 3–4 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, sauté 6 minced garlic cloves for 1 minute until fragrant.
- Pour in 1 cup chicken broth and 1/3 cup Lemon Balsamic, scraping up browned bits from the skillet.
- Simmer 3–4 minutes to slightly reduce liquid.
- Stir in 1/2 cup butter until melted and combined.
- Return chicken to skillet, tossing to coat in sauce. Garnish with 2 TBSP chopped parsley.
- For rice: In a saucepan, combine 1 cup long-grain rice, 2 cups chicken broth, and 2 minced garlic cloves. Bring to a boil.
- Reduce heat, cover, and simmer 15–20 minutes until rice is tender and liquid absorbed.
- Remove from heat and stir in 1/4 cup grated Parmesan. Season with salt and pepper.
- To serve, divide rice onto plates, top with chicken scampi and sauce, garnish with parsley, and enjoy.
Notes
- Use freshly grated Parmesan for best texture and flavor.
- Don’t overcook chicken; remove promptly when golden brown.
- For a lighter version, substitute brown rice or cauliflower rice.
- Store leftovers in an airtight container for up to 3 days.
