Description

Chicken Scampi With Garlic Parmesan Rice combines tender, golden-seared chicken strips in a buttery garlic sauce with creamy Parmesan-infused rice for the ultimate comfort food experience.


Ingredients

  • 1 pound boneless skinless chicken breasts, sliced into thin strips
  • Mike’s SPG all-purpose seasoning, to taste
  • 2 TBSP Olive Oil Marketplace Parmesan Garlic EVOO
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1/3 cup Olive Oil Marketplace White Lemon Balsamic
  • 1/2 cup butter
  • 2 TBSP fresh parsley, chopped
  • 1 cup long-grain white rice
  • 2 cups chicken broth (for rice)
  • 2 cloves garlic, minced (for rice)
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Season chicken strips with Mike’s SPG seasoning.
  2. In a large cast iron skillet, heat 2 TBSP olive oil over medium-high heat.
  3. Add seasoned chicken and cook 3–4 minutes per side until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, sauté 6 minced garlic cloves for 1 minute until fragrant.
  5. Pour in 1 cup chicken broth and 1/3 cup Lemon Balsamic, scraping up browned bits from the skillet.
  6. Simmer 3–4 minutes to slightly reduce liquid.
  7. Stir in 1/2 cup butter until melted and combined.
  8. Return chicken to skillet, tossing to coat in sauce. Garnish with 2 TBSP chopped parsley.
  9. For rice: In a saucepan, combine 1 cup long-grain rice, 2 cups chicken broth, and 2 minced garlic cloves. Bring to a boil.
  10. Reduce heat, cover, and simmer 15–20 minutes until rice is tender and liquid absorbed.
  11. Remove from heat and stir in 1/4 cup grated Parmesan. Season with salt and pepper.
  12. To serve, divide rice onto plates, top with chicken scampi and sauce, garnish with parsley, and enjoy.

Notes

  • Use freshly grated Parmesan for best texture and flavor.
  • Don’t overcook chicken; remove promptly when golden brown.
  • For a lighter version, substitute brown rice or cauliflower rice.
  • Store leftovers in an airtight container for up to 3 days.
