Description
A rich and comforting Hungarian classic, Chicken Paprikash features tender bone-in chicken simmered in a creamy paprika-infused tomato sauce, finished with a swirl of sour cream.
Ingredients
Scale
- 4 chicken thighs and 4 drumsticks (about 3.5 pounds)
- Salt and freshly ground pepper, to taste
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons Hungarian sweet paprika
- 1/2 cup white wine (optional)
- 1 (14oz) can crushed tomatoes, preferably San Marzano
- 1 cup chicken broth
- 2/3 cup FAGE Sour Cream
- 2 tablespoons flour
- 2 tablespoons chopped parsley, for garnishing (optional)
Instructions
- Heat vegetable oil in a Dutch oven or large skillet over medium-high heat.
- Season chicken with salt and pepper. Brown all sides in batches. Remove to a plate.
- Add onions and cook until soft and golden, about 8–10 minutes. Stir in garlic and cook 1 minute more.
- Remove from heat, stir in paprika, then return to heat. Add wine to deglaze the pan.
- Add crushed tomatoes and chicken broth. Stir to combine, then nestle the chicken back into the pan.
- Bring to a simmer, cover, and cook for 30 minutes. Uncover and simmer 15 more minutes.
- In a bowl, mix sour cream and flour. Add a ladle of hot sauce to temper, then stir mixture into the pan.
- Simmer for 5–7 minutes to thicken. Garnish with parsley and serve hot.
Notes
- Use authentic Hungarian sweet paprika for best flavor.
- Tempering the sour cream prevents curdling.
- Serve with egg noodles, mashed potatoes, or rice for a full meal.
