Description

A rich and comforting Hungarian classic, Chicken Paprikash features tender bone-in chicken simmered in a creamy paprika-infused tomato sauce, finished with a swirl of sour cream.


Ingredients

  • 4 chicken thighs and 4 drumsticks (about 3.5 pounds)
  • Salt and freshly ground pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons Hungarian sweet paprika
  • 1/2 cup white wine (optional)
  • 1 (14oz) can crushed tomatoes, preferably San Marzano
  • 1 cup chicken broth
  • 2/3 cup FAGE Sour Cream
  • 2 tablespoons flour
  • 2 tablespoons chopped parsley, for garnishing (optional)


Instructions

  1. Heat vegetable oil in a Dutch oven or large skillet over medium-high heat.
  2. Season chicken with salt and pepper. Brown all sides in batches. Remove to a plate.
  3. Add onions and cook until soft and golden, about 8–10 minutes. Stir in garlic and cook 1 minute more.
  4. Remove from heat, stir in paprika, then return to heat. Add wine to deglaze the pan.
  5. Add crushed tomatoes and chicken broth. Stir to combine, then nestle the chicken back into the pan.
  6. Bring to a simmer, cover, and cook for 30 minutes. Uncover and simmer 15 more minutes.
  7. In a bowl, mix sour cream and flour. Add a ladle of hot sauce to temper, then stir mixture into the pan.
  8. Simmer for 5–7 minutes to thicken. Garnish with parsley and serve hot.

Notes

  • Use authentic Hungarian sweet paprika for best flavor.
  • Tempering the sour cream prevents curdling.
  • Serve with egg noodles, mashed potatoes, or rice for a full meal.
