Description

Chicken Nacho Casserole is a delicious, layered dish filled with tender chicken, crunchy tortilla chips, melted cheese, and zesty seasonings. It’s a crowd-pleasing comfort food that’s perfect for family dinners or parties.

  • 2 cups cooked chicken, shredded
  • 1 bag tortilla chips, crushed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup chopped green onions (optional, for garnish)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, black beans, diced tomatoes with green chilies, salsa, sour cream, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. In a baking dish, layer half of the crushed tortilla chips, then spread half of the chicken mixture over the chips. Sprinkle half of the shredded cheeses on top.
  4. Repeat the layers: tortilla chips, chicken mixture, and cheese. Finish with a layer of cheese on top.
  5. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped green onions and fresh cilantro if desired.

Notes

  • Feel free to add other ingredients like jalapeños, olives, or corn for extra flavor and texture.
  • For a spicier version, use a hot salsa or add more chili powder and diced green chilies.
