Description

Tender and flavorful chicken meatballs made with ground chicken, herbs, and spices. Perfect as a main dish, appetizer, or for meal prepping.


Ingredients

  • 1 lb (450g) ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • 2 tbsp chopped parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 2 tbsp olive oil (for frying or baking)

Instructions

  1. Preheat oven to 400°F (200°C) or heat oil in a skillet over medium heat if frying.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, onion, parsley, salt, pepper, and paprika.
  3. Mix until just combined; do not overmix.
  4. Form mixture into 1-inch meatballs using damp hands or a scoop.
  5. Arrange on a baking sheet lined with parchment paper or prepare to cook in the skillet.
  6. Bake for 18–20 minutes, turning once halfway, or fry for 10–12 minutes until golden and cooked through.
  7. Serve hot with sauce, pasta, or as desired.

Notes

  • For juicier meatballs, add a tablespoon of milk to the mixture.
  • You can use ground turkey instead of chicken.
  • Double the batch and freeze cooked meatballs for future meals.
