Chicken Francese is a classic Italian-American dish featuring tender chicken cutlets lightly battered, pan-fried, and simmered in a lemony butter sauce.

- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 3 large eggs
- 1/4 cup milk
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1 cup chicken broth
- 1/2 cup dry white wine
- 1 lemon, thinly sliced
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Pound the chicken breasts to an even thickness and season with salt and pepper.
- Place the flour in a shallow dish. In another dish, whisk the eggs, milk, and Parmesan cheese together.
- Dredge each chicken breast in the flour, then dip into the egg mixture, coating well.
- Heat olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown on both sides, about 4 minutes per side. Remove and set aside.
- In the same skillet, add butter, chicken broth, white wine, lemon slices, and lemon juice. Bring to a simmer.
- Return the chicken to the skillet and cook for another 5-7 minutes, spooning sauce over the chicken until fully cooked through.
- Garnish with chopped parsley and serve immediately.
Notes
- For a thicker sauce, add a teaspoon of cornstarch mixed with water.
- Serve with pasta, mashed potatoes, or steamed vegetables.
- Use fresh lemon juice for the best flavor.
