Description

Chicken Francese is a classic Italian-American dish featuring tender chicken cutlets lightly battered, pan-fried, and simmered in a lemony butter sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1/4 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 1 lemon, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Place the flour in a shallow dish. In another dish, whisk the eggs, milk, and Parmesan cheese together.
  3. Dredge each chicken breast in the flour, then dip into the egg mixture, coating well.
  4. Heat olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown on both sides, about 4 minutes per side. Remove and set aside.
  5. In the same skillet, add butter, chicken broth, white wine, lemon slices, and lemon juice. Bring to a simmer.
  6. Return the chicken to the skillet and cook for another 5-7 minutes, spooning sauce over the chicken until fully cooked through.
  7. Garnish with chopped parsley and serve immediately.

Notes

  • For a thicker sauce, add a teaspoon of cornstarch mixed with water.
  • Serve with pasta, mashed potatoes, or steamed vegetables.
  • Use fresh lemon juice for the best flavor.
