Description

Chicken Fajita Melts are a delicious fusion of seasoned chicken, bell peppers, onions, and melted cheese, all sandwiched between two slices of toasted bread for a perfect cheesy, flavorful meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 4 slices of bread (preferably sourdough or whole wheat)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Butter for toasting bread
  • Optional toppings: sour cream, guacamole, salsa

Instructions

  1. In a bowl, combine chicken slices with olive oil, cumin, chili powder, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
  2. Heat a skillet over medium-high heat and cook the chicken for 5-7 minutes, or until fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, add the bell peppers and onion. Cook for 5 minutes, or until softened and slightly caramelized. Remove from heat and set aside.
  4. Preheat a separate skillet or griddle over medium heat. Butter one side of each slice of bread.
  5. Assemble the melts by placing a slice of bread (buttered side down) on the skillet, and layer with chicken, sautéed peppers and onions, and a mix of cheddar and mozzarella cheese.
  6. Top with a second slice of bread (buttered side up). Grill for 2-3 minutes per side until the bread is golden brown and the cheese is melted.
  7. Remove from heat, cut in half, and serve with optional toppings like sour cream, guacamole, or salsa.

Notes

  • For added spice, sprinkle some jalapeños inside the sandwich before grilling.
  • If you prefer a healthier version, you can use whole wheat bread and low-fat cheese.
  • This recipe can be made with leftover cooked chicken for a quicker meal.
