Description
Chicken Fajita Melts are a delicious fusion of seasoned chicken, bell peppers, onions, and melted cheese, all sandwiched between two slices of toasted bread for a perfect cheesy, flavorful meal.

- 1 pound boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 4 slices of bread (preferably sourdough or whole wheat)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Butter for toasting bread
- Optional toppings: sour cream, guacamole, salsa
Instructions
- In a bowl, combine chicken slices with olive oil, cumin, chili powder, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
- Heat a skillet over medium-high heat and cook the chicken for 5-7 minutes, or until fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the bell peppers and onion. Cook for 5 minutes, or until softened and slightly caramelized. Remove from heat and set aside.
- Preheat a separate skillet or griddle over medium heat. Butter one side of each slice of bread.
- Assemble the melts by placing a slice of bread (buttered side down) on the skillet, and layer with chicken, sautéed peppers and onions, and a mix of cheddar and mozzarella cheese.
- Top with a second slice of bread (buttered side up). Grill for 2-3 minutes per side until the bread is golden brown and the cheese is melted.
- Remove from heat, cut in half, and serve with optional toppings like sour cream, guacamole, or salsa.
Notes
- For added spice, sprinkle some jalapeños inside the sandwich before grilling.
- If you prefer a healthier version, you can use whole wheat bread and low-fat cheese.
- This recipe can be made with leftover cooked chicken for a quicker meal.
