Description

Chicken Curry Puffs are savory, flaky pastries filled with a spiced chicken filling. Perfect as an appetizer or snack, these puffs are packed with flavor and a hint of heat from the curry spices.

Ingredients

Scale
  • 1 lb (450g) ground chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1/4 cup frozen peas
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • 1 tbsp soy sauce
  • 1 tbsp fresh cilantro, chopped (optional)
  • 1 package puff pastry (2 sheets)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large skillet, heat a little oil over medium heat. Add the onions and cook for 3-4 minutes, until softened. Add the garlic and ginger, cooking for another minute until fragrant.
  3. Add the ground chicken to the skillet and cook until browned, breaking it apart with a spoon. Stir in the curry powder, cumin, turmeric, and chili powder. Season with salt and pepper.
  4. Pour in the chicken broth and soy sauce, stirring until the mixture thickens. Add the peas and cook for another 2-3 minutes until the peas are tender. Remove from heat and let the mixture cool slightly. Stir in fresh cilantro if desired.
  5. Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 9 squares or circles, depending on your preferred shape for the puffs.
  6. Place a spoonful of the chicken filling in the center of each pastry square or circle. Fold the pastry over the filling to form a pocket or triangle, pressing the edges to seal. Use a fork to crimp the edges for a decorative finish.
  7. Brush each puff with the beaten egg to give them a golden, shiny finish.
  8. Place the puffs on the prepared baking sheet and bake for 20-25 minutes, or until the pastry is golden and puffed.
  9. Serve warm as an appetizer or snack.

Notes

  • Feel free to add other vegetables like carrots or potatoes to the filling for extra texture.
  • For a spicier kick, increase the amount of chili powder or add chopped fresh chili.
  • You can make these ahead of time and freeze them before baking. Bake from frozen, adding a few extra minutes to the cooking time.
