Chicken Curry Puffs are savory, flaky pastries filled with a spiced chicken filling. Perfect as an appetizer or snack, these puffs are packed with flavor and a hint of heat from the curry spices.

- 1 lb (450g) ground chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 1/4 cup frozen peas
- 2 tbsp curry powder
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp chili powder
- Salt and pepper to taste
- 1/4 cup chicken broth
- 1 tbsp soy sauce
- 1 tbsp fresh cilantro, chopped (optional)
- 1 package puff pastry (2 sheets)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large skillet, heat a little oil over medium heat. Add the onions and cook for 3-4 minutes, until softened. Add the garlic and ginger, cooking for another minute until fragrant.
- Add the ground chicken to the skillet and cook until browned, breaking it apart with a spoon. Stir in the curry powder, cumin, turmeric, and chili powder. Season with salt and pepper.
- Pour in the chicken broth and soy sauce, stirring until the mixture thickens. Add the peas and cook for another 2-3 minutes until the peas are tender. Remove from heat and let the mixture cool slightly. Stir in fresh cilantro if desired.
- Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 9 squares or circles, depending on your preferred shape for the puffs.
- Place a spoonful of the chicken filling in the center of each pastry square or circle. Fold the pastry over the filling to form a pocket or triangle, pressing the edges to seal. Use a fork to crimp the edges for a decorative finish.
- Brush each puff with the beaten egg to give them a golden, shiny finish.
- Place the puffs on the prepared baking sheet and bake for 20-25 minutes, or until the pastry is golden and puffed.
- Serve warm as an appetizer or snack.
Notes
- Feel free to add other vegetables like carrots or potatoes to the filling for extra texture.
- For a spicier kick, increase the amount of chili powder or add chopped fresh chili.
- You can make these ahead of time and freeze them before baking. Bake from frozen, adding a few extra minutes to the cooking time.
