- 4 boneless skinless chicken breasts
- 8 slices sliced deli ham
- 4 slices Swiss cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1 tablespoon Dijon mustard (optional)
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C) and place a wire rack on a baking sheet.
- Pound chicken breasts flat to 1/4-inch thickness and season with salt, pepper, and garlic powder. Spread Dijon mustard if using.
- Lay 2 slices of ham and 1 slice of cheese on each chicken breast. Roll tightly and secure with toothpicks or kitchen twine.
- Prepare three bowls for dredging: one with flour, one with beaten eggs, and one with breadcrumbs.
- Roll each chicken roll-up in flour, then dip in eggs, and finally coat with breadcrumbs.
- Place on rack and bake for 25–30 minutes until golden and cooked through.
- Let rest 5 minutes, remove toothpicks, and slice into rounds before serving.
