  • ½ cup butter (1 stick melted)
  • 4 cups shredded chicken (rotisserie recommended)
  • 1 (12oz) bag frozen mixed vegetables
  • 1 (11.36oz) box Red Lobster Cheddar Bay Biscuit Mix
  • 2 cups whole milk
  • 1 (14.5oz) can chicken broth (about 2 cups)
  • 1 (10.5oz) can cream of chicken soup
  • Seasoning to taste (garlic powder, onion powder, black pepper)

Instructions

  1. Preheat oven to 375°F and grease the sides of a large 9×13-inch baking dish.
  2. Melt the butter and spread it evenly over the bottom of the prepared dish.
  3. Layer shredded chicken evenly over the butter.
  4. Evenly distribute frozen vegetables over the chicken and sprinkle with desired seasonings (garlic powder, onion powder, black pepper).
  5. In a medium bowl, whisk together the milk, Cheddar Bay Biscuit Mix, and the seasoning packet. Pour evenly over the chicken and vegetables. DO NOT STIR.
  6. In the same bowl, whisk together cream of chicken soup and chicken broth until smooth. Pour evenly over the biscuit layer. DO NOT STIR.
  7. Bake uncovered on the center rack for 55–65 minutes or until the biscuit topping is deep golden brown and fully cooked.
  8. Remove from the oven and allow it to rest for 10 minutes before serving to let the sauce thicken.

Notes

  • Want to make it cheesy? Sprinkle 1–2 cups of shredded cheddar over the frozen veggies before adding the biscuit mix.
  • Allow the casserole to cook until the topping is a deep golden brown for best results.
