Fresh, crisp Chicken Caesar Rice Paper Rolls filled with romaine lettuce, tender chicken, scallions, and creamy Caesar dressing. A refreshing twist on the classic Caesar salad wrapped in rice paper.

- 1/2 cup aioli or mayonnaise
- 1/4 cup grated parmesan cheese (for dressing)
- 1 teaspoon fish sauce
- 1 teaspoon white miso paste
- Black pepper, to taste
- 12 sheets of rice paper
- 1 small Romaine lettuce, chopped
- 2 cooked chicken breasts, chopped
- 2 scallions, finely sliced
- 1/4 cup grated parmesan cheese (for filling)
Instructions
- In a mixing bowl, combine mayonnaise, grated parmesan, fish sauce, white miso paste, and black pepper. Whisk until smooth to make the Caesar dressing.
- Prepare all filling ingredients by chopping romaine, chicken, and scallions.
- Fill a shallow dish with warm water and dip one rice paper sheet until softened.
- Lay the softened sheet on a damp board and add lettuce, chicken, scallions, a sprinkle of parmesan, and a spoonful of dressing.
- Fold the bottom over the filling, tuck in the sides, and roll tightly to seal.
- Repeat with remaining sheets and filling until all rolls are made.
- Slice in half and serve with extra Caesar dressing for dipping.
Notes
- Use warm water, not hot, to prevent tearing the rice paper.
- Keep finished rolls covered with a damp towel until serving.
- Chill the rolls for 10 minutes before serving for best texture.
