- 2 ¾ cups (344 g) all-purpose flour
- 1 ½ teaspoons cream of tartar
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- 1 cup (226 g or 2 sticks) unsalted butter, room temperature
- 1 ½ cups (300 g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- Cinnamon sugar topping:
- 3 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F. Grease and flour (or line with parchment paper) a 9×13 baking pan. Set aside.
- In a large bowl, whisk together flour, cream of tartar, baking soda, cinnamon, and salt. Set aside.
- In the bowl of a stand mixer or using a hand mixer, beat butter and sugar on medium-high speed until light and fluffy, about 3 minutes.
- Add eggs and vanilla extract. Mix until combined, scraping down the sides and bottom of the bowl as needed.
- Gradually add the dry flour mixture to the wet ingredients, mixing just until combined. Avoid overmixing.
- Press the dough evenly into the prepared baking pan using a spatula or your hands.
- In a small bowl, mix together 3 tablespoons granulated sugar and 1 teaspoon ground cinnamon for the topping.
- Sprinkle the cinnamon sugar topping evenly over the dough from about a foot above to ensure even distribution.
- Bake at 350°F for 25–28 minutes or until the edges are set and the center is still soft.
- Allow bars to cool completely in the pan before cutting into squares and serving.
Notes
- Do not overbake; the bars continue to cook as they cool.
- For a softer texture, store with a slice of bread in an airtight container.
- These bars can be frozen for up to 3 months; wrap tightly and thaw before serving.
