Description
Cherry & Peach Pasta Salad with Feta is a refreshing twist on traditional pasta salad—sweet, tangy, and a little creamy. Juicy cherries and ripe peaches bring a burst of summer flavor, while crumbled feta adds a salty punch that ties everything together. It’s light, colorful, and perfect for picnics, potlucks, or an easy warm-weather lunch.
Ingredients
Scale
- 8 oz rotini or bowtie pasta
- 1 cup fresh cherries, pitted and halved
- 1 ripe peach, diced
- 1/3 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh basil or mint
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar (or lemon juice)
- Salt and black pepper to taste
Instructions
- Cook pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine cooled pasta, cherries, peaches, feta, red onion, and fresh herbs.
- In a small bowl or jar, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour dressing over the pasta salad and toss gently to combine.
- Chill in the fridge for 20–30 minutes before serving to let the flavors meld.
- Garnish with extra feta or herbs before serving, if desired.
Notes
- Use firm, ripe peaches for best texture and flavor.
- You can substitute dried cherries or cranberries when fresh cherries aren’t in season.
- Goat cheese or mozzarella pearls make great alternatives to feta.
- This salad is best enjoyed the same day it’s made.
