Ingredients
- Cooked chicken, shredded: 2 cups
- Flour tortillas: 4 large
- Shredded cheese: 2 cups
- Chunky salsa: 3/4 cup
- Olive oil: 1 tablespoon
- Salt: 1/4 teaspoon
- Black pepper: 1/4 teaspoon
- Chopped cilantro: 2 tablespoons
- Avocado: 1 whole, mashed, for serving
- Sour cream: 1/2 cup, for serving
- Lettuce, shredded: 1 cup, for serving
Instructions
- Heat a skillet over medium heat.
- In a bowl, mix the shredded chicken with salsa, salt, and black pepper.
- Lightly brush the skillet with olive oil.
- Place one tortilla in the skillet and sprinkle a layer of cheese on top.
- Add an even layer of the chicken mixture, then top with more cheese.
- Place a second tortilla on top and press gently.
- Cook for 3 to 4 minutes per side until golden and the cheese is melted.
- Remove from the skillet and let rest briefly.
- Slice into wedges and garnish with chopped cilantro.
- Serve with mashed avocado, sour cream, and shredded lettuce.
Notes
- Do not overfill the quesadilla to make flipping easier.
- Cook over medium heat for even browning.
