Description

Crispy golden quesadillas filled with juicy salsa seasoned chicken and melted cheese, served with fresh toppings for a quick and comforting meal.


Ingredients

  • Cooked chicken, shredded: 2 cups
  • Flour tortillas: 4 large
  • Shredded cheese: 2 cups
  • Chunky salsa: 3/4 cup
  • Olive oil: 1 tablespoon
  • Salt: 1/4 teaspoon
  • Black pepper: 1/4 teaspoon
  • Chopped cilantro: 2 tablespoons
  • Avocado: 1 whole, mashed, for serving
  • Sour cream: 1/2 cup, for serving
  • Lettuce, shredded: 1 cup, for serving


Instructions

  1. Heat a skillet over medium heat.
  2. In a bowl, mix the shredded chicken with salsa, salt, and black pepper.
  3. Lightly brush the skillet with olive oil.
  4. Place one tortilla in the skillet and sprinkle a layer of cheese on top.
  5. Add an even layer of the chicken mixture, then top with more cheese.
  6. Place a second tortilla on top and press gently.
  7. Cook for 3 to 4 minutes per side until golden and the cheese is melted.
  8. Remove from the skillet and let rest briefly.
  9. Slice into wedges and garnish with chopped cilantro.
  10. Serve with mashed avocado, sour cream, and shredded lettuce.

Notes

  • Do not overfill the quesadilla to make flipping easier.
  • Cook over medium heat for even browning.
