This Cheesy Quesarito is the ultimate Taco Bell copycat β a melty cheese quesadilla wrapped around a flavorful beef and rice burrito with creamy sour cream and taco seasoning. Grilled to crispy perfection, itβs even better than the original.

- 8 large flour tortillas
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 2 cups shredded cheddar cheese
- 1 1/2 cups cooked white rice
- 1/2 cup sour cream
- 2 tablespoons oil or butter for grilling
Instructions
- Cook ground beef in a skillet until browned. Stir in taco seasoning and a splash of water. Simmer for 5 minutes. Set aside.
- Place one tortilla in a skillet over medium heat. Sprinkle with 1/2 cup shredded cheese, then top with a second tortilla. Cook until golden and cheese is melted. Flip and brown the other side. Remove from pan.
- Spread seasoned beef in a line down the center of the quesadilla. Add rice and sour cream on top.
- Fold in the sides and roll up tightly like a burrito.
- Place seam-side down in the skillet and grill for 1β2 minutes to seal and crisp the outside.
- Slice and serve warm with optional salsa or hot sauce on the side.
Notes
- Use warm tortillas to prevent cracking while rolling.
- Press the quesarito with a spatula while grilling for a crisp finish.
- Customize with beans, veggies, or nacho cheese inside.
