- 1 cup shredded cheddar cheese
- 1/2 cup cottage cheese
- 1/2 cup diced bell peppers (any color)
- 1/4 cup chopped onions
- 1/2 cup spinach, chopped
- 1/4 cup milk (dairy or plant-based)
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Olive oil for greasing the pan
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
- In a large bowl, whisk together eggs, milk, garlic powder, paprika, salt, and pepper.
- Stir in the cheddar cheese, cottage cheese, bell peppers, onions, and spinach until evenly combined.
- Pour the egg mixture into the prepared baking dish.
- Bake for 25–30 minutes, or until the eggs are set and lightly golden on top. A toothpick inserted should come out clean.
- Let it cool slightly before slicing and serving.
