- 500g boneless chicken breast, cut into cubes
- 500g potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 200°C (400°F).
- In a large bowl, mix chicken, potatoes, olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Transfer mixture into a greased baking dish and cover with foil. Bake for 35 minutes.
- Remove foil, stir the contents, and spread sour cream and milk evenly over the dish.
- Sprinkle cheddar and mozzarella cheeses on top.
- Return to the oven and bake uncovered for 15-20 minutes, until cheese is bubbly and golden and chicken is cooked through.
- Garnish with chopped parsley before serving, if desired.
Notes
- You can use pre-cooked rotisserie chicken to save time.
- Add chopped broccoli or bell peppers for extra veggies.
- Swap cheddar with pepper jack for a spicier version.
