Cheesy Onion Crisps are crispy, golden-brown potato chips topped with melted cheese and sautéed onions. They make a perfect savory snack or side dish, combining rich cheese and sweet caramelized onions for an irresistible flavor.

- 4 large russet potatoes, thinly sliced
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup caramelized onions (see note for instructions)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, toss the potato slices with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until evenly coated.
- Spread the seasoned potato slices in a single layer on the prepared baking sheet.
- Bake for 20–25 minutes, flipping halfway through, until the chips are golden and crispy.
- While the chips are baking, caramelize the onions by sautéing thinly sliced onions in a pan with a bit of olive oil over medium-low heat for about 15–20 minutes, stirring occasionally until soft and golden.
- Once the chips are baked, remove from the oven and sprinkle with shredded cheddar cheese. Return to the oven for an additional 5–7 minutes until the cheese is melted and bubbly.
- Top the cheesy chips with the caramelized onions and garnish with fresh parsley, if desired. Serve immediately and enjoy!
Notes
- For an extra cheesy flavor, use a blend of cheddar and mozzarella.
- You can also add a sprinkle of chili flakes or hot sauce for a spicy kick.
- If you prefer, you can fry the potato slices instead of baking for a crispier texture.
