  • 1 large French bread loaf (or Italian loaf), halved lengthwise
  • 1/2 lb (225g) raw shrimp, peeled, deveined, and chopped
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (plus more for garnish)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt the butter and sauté garlic for 1–2 minutes until fragrant.
  3. Add the chopped shrimp to the skillet, season with salt, pepper, and red pepper flakes, and cook for 2–3 minutes until just pink. Remove from heat and let cool slightly.
  4. In a bowl, mix mayonnaise, sour cream, mozzarella, Parmesan, parsley, and cooked shrimp mixture until combined.
  5. Spread the mixture generously over the cut sides of the bread.
  6. Place bread halves on the prepared baking sheet and bake for 12–15 minutes, or until the cheese is melted and bubbly.
  7. Broil for 1–2 minutes at the end for extra golden top, watching carefully.
  8. Garnish with more fresh parsley, slice, and serve warm.

Notes

  • You can use pre-cooked shrimp—just add it at the mixing stage, not to the pan.
  • For extra richness, add a splash of heavy cream to the shrimp mixture.
