- 32 tortilla chips
- 6 large eggs
- 1/4 cup milk
- 8 slices smoked bacon, cooked and crumbled
- 8 ounces chipotle cheddar cheese, shredded
- 10 ounces canned black beans, drained and rinsed
- 2 tomatoes, seeded and chopped
- 1 jalapeño, seeded and finely diced
- 1 small yellow onion, finely diced

Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking sheet with cooking spray.
- Whisk the eggs and milk together in a bowl until smooth.
- Heat a skillet over medium heat, coat with cooking spray, and scramble the eggs until just set. Remove from heat.
- Arrange the tortilla chips evenly on the prepared baking sheet.
- Top with scrambled eggs, black beans, bacon, onion, and jalapeño.
- Sprinkle the shredded chipotle cheddar evenly over the top.
- Bake for 7–10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with chopped tomatoes. Serve hot and enjoy.
