Description

These Cheesy Breakfast Nachos combine scrambled eggs, smoky bacon, black beans, and melted chipotle cheddar layered over crispy tortilla chips. A fun, hearty, and flavor-packed breakfast or brunch dish that’s ready in minutes.


Ingredients

  • 32 tortilla chips
  • 6 large eggs
  • 1/4 cup milk
  • 8 slices smoked bacon, cooked and crumbled
  • 8 ounces chipotle cheddar cheese, shredded
  • 10 ounces canned black beans, drained and rinsed
  • 2 tomatoes, seeded and chopped
  • 1 jalapeño, seeded and finely diced
  • 1 small yellow onion, finely diced
  • Cooking spray


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet with cooking spray.
  2. Whisk the eggs and milk together in a bowl until smooth.
  3. Heat a skillet over medium heat, coat with cooking spray, and scramble the eggs until just set. Remove from heat.
  4. Arrange the tortilla chips evenly on the prepared baking sheet.
  5. Top with scrambled eggs, black beans, bacon, onion, and jalapeño.
  6. Sprinkle the shredded chipotle cheddar evenly over the top.
  7. Bake for 7–10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and top with chopped tomatoes. Serve hot and enjoy.

Notes

  • Use sturdy chips to hold all the toppings without breaking.
  • Pre-cook all toppings so they heat evenly in the oven.
  • Add a layer of cheese under the eggs to prevent sogginess.
