Description

Juicy BBQ glazed chicken baked until tender and topped with melted mozzarella, served alongside crispy roasted paprika potatoes. A bold, smoky, and cheesy comfort meal perfect for dinner or meal prep.

  • 2 pounds raw chicken thighs
  • 2 pounds potatoes, chopped
  • 2 tablespoons olive oil
  • 1 cup BBQ sauce
  • 2 teaspoons paprika
  • 3 garlic cloves, minced
  • 1 medium onion, sliced
  • 1 1/2 cups shredded mozzarella cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, toss chopped potatoes with olive oil, paprika, salt, and black pepper until evenly coated.
  3. Spread potatoes in a single layer on the prepared baking sheet.
  4. Roast potatoes for 30 to 35 minutes, flipping halfway through, until golden and crispy.
  5. Season chicken thighs with salt and black pepper and place them in an oven safe baking dish.
  6. Top chicken with sliced onion and minced garlic.
  7. Brush BBQ sauce generously over the chicken.
  8. Bake for 25 to 30 minutes, or until the chicken is cooked through.
  9. Sprinkle shredded mozzarella cheese over the chicken and return to the oven for 5 minutes until melted and bubbly.
  10. Remove from oven and let rest briefly. Garnish with chopped fresh parsley.
  11. Serve cheesy BBQ chicken alongside the roasted paprika potatoes and enjoy warm.
