- 1¾–2 cups crushed Ritz crackers (about 4 sleeves)
- 1 stick butter, melted (8 tbsp)
- 4 tbsp butter (for sauce)
- 3 cans (15 oz each) extra-long asparagus, drained
- 1½–2 cups milk
- 3 tbsp flour
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a medium baking dish.
- In a saucepan, melt 4 tbsp butter over medium heat. Whisk in flour until smooth, then gradually add milk, whisking constantly until thickened.
- Stir in shredded cheddar cheese and remove from heat once melted and creamy.
- Drain asparagus and layer half in the prepared dish. Pour over half the cheese sauce. Repeat layers, ending with sauce on top.
- In a small bowl, combine crushed Ritz crackers with melted butter. Sprinkle evenly over the casserole.
- Bake uncovered for 25–30 minutes, until the top is golden and bubbling.
- Let rest for 5–10 minutes before serving warm.
