- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted and slightly cooled
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 2 cups semisweet chocolate chips
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar (for filling)
- 1/2 teaspoon vanilla extract (for filling)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, mix melted butter, brown sugar, and granulated sugar until combined.
- Add egg, egg yolk, and vanilla extract. Mix well.
- Gradually add dry ingredients to wet ingredients. Stir in chocolate chips.
- In another bowl, beat cream cheese, 1/4 cup sugar, and 1/2 teaspoon vanilla until smooth.
- Scoop about 1 tablespoon of cookie dough, flatten slightly, and place 1 teaspoon of cheesecake filling in the center.
- Top with another tablespoon of cookie dough and seal edges to form a ball.
- Place on baking sheet and repeat with remaining dough and filling.
- Bake for 12-15 minutes or until edges are golden brown.
- Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Chill dough for 30 minutes if it feels too soft to handle.
- Store cookies in the refrigerator due to the cream cheese filling.
- Warm slightly before serving for a gooey center.
