- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 cup sour cream
- 1/4 cup graham cracker crumbs

Instructions
- Wash and hull the strawberries, then use a small spoon or melon baller to carefully remove the center of each strawberry, creating a small hollow.
- In a mixing bowl, beat the cream cheese and powdered sugar together until smooth and creamy.
- Stir in vanilla extract and sour cream, mixing until well combined.
- Spoon or pipe the cheesecake mixture into the hollowed-out strawberries, filling them generously.
- Sprinkle graham cracker crumbs on top of each filled strawberry.
- Optionally, garnish with a small mint leaf for added color and freshness.
- Serve immediately or refrigerate until ready to serve.
Notes
- For extra flavor, add a splash of lemon juice to the cheesecake mixture.
- These can be made ahead and stored in the refrigerator for up to 4 hours.
