- 18–24 large strawberries
- 1 cup heavy whipping cream
- 8 oz cream cheese (softened)
- ⅔ cup white granulated sugar
- 1 tbsp vanilla extract
- 1 tbsp fresh lemon juice
- ½ cup graham cracker crumbs
Instructions
- Cut off the stems and slice strawberries in half. Trim a small sliver from the back of each half so they sit upright.
- Use a small melon baller to scoop out a small indent in each strawberry half.
- In a medium bowl, beat heavy whipping cream until stiff peaks form (about 5 minutes).
- In another bowl, mix softened cream cheese, sugar, vanilla extract, and lemon juice until smooth and creamy using an electric mixer.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Transfer the cheesecake filling into a piping bag fitted with a star tip and pipe onto each hollowed strawberry.
- Sprinkle graham cracker crumbs over the filled strawberries for a cheesecake crust effect.
- Chill for 30 minutes if desired, then serve and enjoy!
