Description

Ingredients

- 6 medium russet potatoes
- 450 g ground beef
- 200 g shredded cheddar cheese
- 3 green onions, chopped
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 teaspoon paprika
- Vegetable oil for frying
- 180 ml mayonnaise
- 20 g fresh basil leaves
- 1 small garlic clove
- 1 tablespoon lemon juice
Instructions
- Bake potatoes until tender, then halve and scoop.
- Brown ground beef with salt, pepper, and paprika.
- Heat oil and fry potato skins until golden.
- Fill skins with beef and cheese.
- Bake until cheese melts.
- Blend mayonnaise, basil, garlic, and lemon juice.
- Garnish skins with green onions and serve with aioli.
Notes
- Serve immediately for best texture.
- Aioli can be made ahead.
