Description

Crispy fried potato skins filled with seasoned ground beef, melted cheese, and served with a fresh basil aioli.


Ingredients

Scale
  • 6 medium russet potatoes
  • 450 g ground beef
  • 200 g shredded cheddar cheese
  • 3 green onions, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • Vegetable oil for frying
  • 180 ml mayonnaise
  • 20 g fresh basil leaves
  • 1 small garlic clove
  • 1 tablespoon lemon juice


Instructions

  1. Bake potatoes until tender, then halve and scoop.
  2. Brown ground beef with salt, pepper, and paprika.
  3. Heat oil and fry potato skins until golden.
  4. Fill skins with beef and cheese.
  5. Bake until cheese melts.
  6. Blend mayonnaise, basil, garlic, and lemon juice.
  7. Garnish skins with green onions and serve with aioli.

Notes

  • Serve immediately for best texture.
  • Aioli can be made ahead.
