- 17 egg roll wrappers
- 1 lb ground beef (80/20)
- 1½ cups shredded cheddar cheese
- ½ cup diced onion
- ¼ cup finely chopped pickles
- 1 tablespoon yellow mustard
- 1 tablespoon ketchup
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Oil for frying
Instructions
- Heat oil in a deep fryer or heavy pot to 350°F (175°C).
- In a skillet, cook ground beef and onion until browned. Drain excess fat.
- Stir in mustard, ketchup, pickles, salt, and pepper. Remove from heat and let cool slightly. Mix in shredded cheese.
- Lay out egg roll wrappers and place 2 tablespoons of filling near the bottom corner. Fold sides in, roll tightly, and seal edges with water.
- Fry egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy.
- Remove and drain on paper towels or a wire rack. Let cool slightly before serving.
- Serve hot with dipping sauces of your choice.
Notes
- Let filling cool before rolling to avoid tearing wrappers.
- Use a thermometer to keep oil at the right temperature for even cooking.
- Freeze uncooked egg rolls for later and fry straight from frozen.
- Serve with burger sauce, ranch, or spicy ketchup for dipping.
