- 2 brioche burger buns
- 2 cheddar cheese slices
- 4 crisp lettuce leaves
- 1 small red onion, thinly sliced
- 3 large potatoes, cut into thick chips
- 2 tablespoons olive oil
- 1 teaspoon fine sea salt, divided
- 1/2 teaspoon black pepper, divided
Instructions
- Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
- Toss the cut potatoes with olive oil, half of the fine sea salt, and half of the black pepper until evenly coated.
- Spread the potatoes in a single layer on the baking sheet and roast for 30 to 35 minutes, turning halfway through, until golden and crisp.
- Divide the ground beef into two equal portions and gently shape into patties without overworking the meat. Season both sides with the remaining salt and pepper.
- Heat a skillet over medium high heat and cook the patties for 3 to 4 minutes per side, depending on desired doneness.
- Place a cheddar cheese slice on each patty during the last minute of cooking and cover briefly to melt.
- Lightly toast the brioche buns cut side down in a dry skillet for 1 to 2 minutes.
- Assemble the burgers by placing lettuce on the bottom bun, topping with the cheesy patty, adding sliced red onion, and closing with the top bun.
- Serve immediately with the hot roasted chips on the side.

- Do not press down on the patties while cooking to keep them juicy.
- Cut the potatoes evenly so the chips roast at the same rate.
