Description

Sweet and tender roasted carrots with golden caramelized edges and a simple honey glaze.


Ingredients

  • 2 pounds fresh carrots, peeled and chopped
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves


Instructions

  1. Preheat oven to 425°F.
  2. Toss carrots with olive oil, salt, and pepper.
  3. Spread carrots on a lined baking sheet.
  4. Roast for 30 minutes, turning halfway.
  5. Drizzle with honey and add thyme.
  6. Roast 5 more minutes and serve.

Notes

  • Add honey near the end to prevent burning.
  • Spread carrots evenly for best caramelization.
