Description

Caramelised Soy Chicken in Garlic Ginger Broth with Rice is a savory, aromatic dish featuring golden-brown chicken glazed with sweet soy sauce, served over fluffy rice and bathed in a rich garlic-ginger broth.


Ingredients

  • 4 boneless chicken thighs, skin-on
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups chicken broth
  • 1 cup jasmine rice
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, mix soy sauce, brown sugar, oyster sauce, and rice vinegar to create the caramel sauce. Set aside.
  2. Heat vegetable oil in a skillet over medium-high heat. Season chicken thighs with salt and pepper, then sear skin-side down until browned and crisp, about 4–5 minutes per side. Remove and set aside.
  3. In the same pan, reduce heat to medium, add garlic and ginger, and sauté for 1 minute.
  4. Pour in the chicken broth and stir in the caramel sauce. Bring to a simmer.
  5. Return the chicken to the pan and simmer uncovered for 10–15 minutes, or until the chicken is cooked through and the sauce slightly thickens.
  6. Meanwhile, cook jasmine rice according to package instructions.
  7. Serve the chicken over a bed of rice, spoon broth over the top, and garnish with green onions and sesame seeds.

Notes

  • Use bone-in thighs for extra flavor if preferred, but adjust cooking time.
  • Add a chili pepper or chili flakes for a spicy kick.
  • This dish pairs well with steamed bok choy or sautéed greens.
