- 4 boneless chicken thighs, skin-on
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon oyster sauce
- 1 tablespoon rice vinegar
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 cups chicken broth
- 1 cup jasmine rice
- 2 green onions, sliced (for garnish)
- Sesame seeds (optional, for garnish)
- Salt and pepper, to taste
Instructions
- In a small bowl, mix soy sauce, brown sugar, oyster sauce, and rice vinegar to create the caramel sauce. Set aside.
- Heat vegetable oil in a skillet over medium-high heat. Season chicken thighs with salt and pepper, then sear skin-side down until browned and crisp, about 4–5 minutes per side. Remove and set aside.
- In the same pan, reduce heat to medium, add garlic and ginger, and sauté for 1 minute.
- Pour in the chicken broth and stir in the caramel sauce. Bring to a simmer.
- Return the chicken to the pan and simmer uncovered for 10–15 minutes, or until the chicken is cooked through and the sauce slightly thickens.
- Meanwhile, cook jasmine rice according to package instructions.
- Serve the chicken over a bed of rice, spoon broth over the top, and garnish with green onions and sesame seeds.
Notes
- Use bone-in thighs for extra flavor if preferred, but adjust cooking time.
- Add a chili pepper or chili flakes for a spicy kick.
- This dish pairs well with steamed bok choy or sautéed greens.
