Description

Crispy salted crackers layered with rich buttery caramel, smooth melted chocolate, and topped with chopped chocolate candy pieces and crunchy nuts. These sweet and salty Caramel Chocolate Cracker Cookies are easy to make and completely irresistible.

  • 1 cup unsalted butter (2 sticks)
  • 1 cup packed brown sugar
  • 2 cups semi sweet chocolate chips
  • 1 cup chocolate candy bars, chopped
  • 1 cup chopped nuts (optional)


Instructions

  1. Preheat oven to 350 degrees F and line a 9 by 13 inch rimmed baking sheet with parchment paper.
  2. Arrange salted crackers in a single tight layer on the prepared baking sheet.
  3. In a medium saucepan over medium heat, melt the butter and brown sugar together. Bring to a boil and cook for 3 minutes, stirring constantly until thick and bubbly.
  4. Immediately pour the hot caramel evenly over the crackers and spread gently with a spatula.
  5. Bake for 5 to 7 minutes until the caramel is bubbling all over.
  6. Remove from the oven and immediately sprinkle chocolate chips evenly on top. Let sit for 5 minutes to melt, then spread into a smooth layer.
  7. Sprinkle chopped chocolate candy pieces and chopped nuts over the melted chocolate and press lightly so they stick.
  8. Let cool completely at room temperature or refrigerate until set, then slice into 24 squares.
