- 1 pre-made pie shell or homemade pie dough
- 11 ounces caramel bits or candies (e.g., Kraft baking caramels)
- ¼ cup heavy cream
- ¾ cup unsalted butter, melted
- ¾ cup granulated sugar
- ½ cup light brown sugar
- 2 large eggs
- ¾ cup all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Roll out the pie dough and fit it into a 9-inch pie pan.
- In a microwave-safe bowl, combine caramel bits and heavy cream. Microwave for 60 seconds, stir, then continue in 30-second intervals until melted and smooth. Chill for 5 minutes.
- In a large mixing bowl, combine melted butter, granulated sugar, and light brown sugar. Mix with a hand or stand mixer for 1 minute.
- Add eggs, cocoa powder, vanilla extract, and salt. Mix until well combined, scraping down the bowl as needed.
- Stir in all-purpose flour until just combined.
- Spread half the brownie batter evenly over the pie crust.
- Pour chilled caramel over the brownie layer, spreading gently if needed. Set aside a few tablespoons for drizzling later.
- Spoon the remaining brownie batter over the caramel layer and spread carefully.
- Bake for 50–60 minutes or until a toothpick inserted comes out with moist crumbs.
- Allow the pie to cool completely. Drizzle reserved caramel over the top and sprinkle with sea salt if desired before serving.

- For a salted caramel variation, sprinkle flaky sea salt over the caramel layer before baking.
- Use high-quality cocoa powder for a richer chocolate flavor.
