- 1 large ciabatta loaf, halved
- 8 ounces fresh mozzarella, sliced
- 2 medium ripe tomatoes, sliced
- 1/2 cup fresh basil leaves
- 1 cup arugula
- 1/4 cup pesto sauce
- 1 tablespoon olive oil
Instructions
- Slice the ciabatta loaf in half horizontally and spread pesto on both sides.
- Layer arugula on the bottom half, followed by tomato slices, mozzarella, and basil leaves.
- Top with the other half of the ciabatta and press lightly.
- Optionally, grill or press the sandwich for 2–3 minutes per side until crisp.
- Drizzle with olive oil, slice, and serve immediately.
