Instructions

  1. Cook the Pasta: Start by boiling a large pot of salted water and cook your pasta according to package instructions. Drain and set aside, reserving a bit of the pasta water for later.
  2. Prepare the Chicken: Season your chicken breasts with salt and pepper. In a large skillet over medium heat, add olive oil and cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let it rest before slicing.
  3. Sauté the Aromatics: In the same skillet, add minced garlic and cook for about 30 seconds until fragrant. Be careful not to burn it!
  4. Add Tomatoes and Basil: Next, toss in the fresh tomatoes and cook for 2-3 minutes until they start to soften. Then, add in the fresh basil, stirring until it wilts.
  5. Combine Everything: Add the cooked pasta and sliced chicken back into the skillet. If the mixture seems dry, add a splash of the reserved pasta water. Mix well to combine everything, allowing the flavors to meld.
  6. Finish with Cheese: Finally, stir in the mozzarella cheese until it melts and becomes gooey throughout the pasta. Serve immediately and enjoy!
