- 2 cups mashed potatoes (about 2 large potatoes, boiled and mashed)
- 1/2 teaspoon Cajun seasoning (adjust to taste)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Salt and pepper, to taste
- 1/2 cup cooked sausage, chopped (preferably smoked or cheddar sausage)
- 1 cup shredded sharp cheddar cheese
- 1 package refrigerated pie crusts (or homemade pastry dough)
- 1 egg, beaten (for egg wash)
- Flour, for dusting
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix mashed potatoes with Cajun seasoning, garlic powder, paprika, salt, and pepper.
- Stir in chopped sausage and shredded cheddar cheese.
- On a lightly floured surface, roll out the pie crust and cut into 4- to 5-inch circles.
- Place 1-2 tablespoons of filling in the center of each circle. Fold over and crimp the edges with a fork to seal.
- Place the hand pies on the prepared baking sheet and brush the tops with beaten egg.
- Cut a small slit on top of each pie to allow steam to escape.
- Bake for 20-25 minutes or until golden brown.
- Cool slightly before serving.
Notes
- You can make and freeze the hand pies before baking for later use.
