Description

Cajun Potato and Cheddar Sausage Hand Pies are delicious, portable pastries filled with a spicy, savory mixture of Cajun-seasoned potatoes, cheddar cheese, and sausage. Perfect for a quick snack or a hearty meal.


Ingredients

  • 1 lb cooked sausage (preferably Cajun-style)
  • 2 large potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon Cajun seasoning
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/2 cup shredded cheddar cheese
  • 1 sheet puff pastry (or pie dough)
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat and cook the diced potatoes until tender, about 8-10 minutes. Add the cooked sausage, Cajun seasoning, paprika, garlic powder, and season with salt and pepper. Stir to combine and cook for an additional 2 minutes.
  3. Remove the skillet from heat and let the mixture cool slightly. Stir in the shredded cheddar cheese until melted and well mixed.
  4. Roll out the puff pastry (or pie dough) on a lightly floured surface and cut into circles (about 4-5 inches in diameter).
  5. Place a spoonful of the sausage-potato mixture in the center of each pastry circle. Fold the pastry over to form a half-moon shape and seal the edges by pressing with a fork.
  6. Place the hand pies on the prepared baking sheet. Beat the egg and brush it over the tops of the hand pies for a golden finish.
  7. Bake for 20-25 minutes, or until the pastries are golden brown and puffed up.
  8. Serve warm and enjoy!

Notes

  • For a spicier version, add chopped jalapeños or hot sauce to the filling.
  • You can use store-bought puff pastry or homemade pie dough for the crust.
  • These hand pies can be made in advance and frozen before baking. Bake directly from frozen, adding a few extra minutes to the cooking time.
