Cajun Potato and Cheddar Sausage Hand Pies are delicious, portable pastries filled with a spicy, savory mixture of Cajun-seasoned potatoes, cheddar cheese, and sausage. Perfect for a quick snack or a hearty meal.

- 1 lb cooked sausage (preferably Cajun-style)
- 2 large potatoes, peeled and diced
- 1 tablespoon olive oil
- 1/2 teaspoon Cajun seasoning
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/2 cup shredded cheddar cheese
- 1 sheet puff pastry (or pie dough)
- 1 egg (for egg wash)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat and cook the diced potatoes until tender, about 8-10 minutes. Add the cooked sausage, Cajun seasoning, paprika, garlic powder, and season with salt and pepper. Stir to combine and cook for an additional 2 minutes.
- Remove the skillet from heat and let the mixture cool slightly. Stir in the shredded cheddar cheese until melted and well mixed.
- Roll out the puff pastry (or pie dough) on a lightly floured surface and cut into circles (about 4-5 inches in diameter).
- Place a spoonful of the sausage-potato mixture in the center of each pastry circle. Fold the pastry over to form a half-moon shape and seal the edges by pressing with a fork.
- Place the hand pies on the prepared baking sheet. Beat the egg and brush it over the tops of the hand pies for a golden finish.
- Bake for 20-25 minutes, or until the pastries are golden brown and puffed up.
- Serve warm and enjoy!
Notes
- For a spicier version, add chopped jalapeños or hot sauce to the filling.
- You can use store-bought puff pastry or homemade pie dough for the crust.
- These hand pies can be made in advance and frozen before baking. Bake directly from frozen, adding a few extra minutes to the cooking time.
