Description

Ingredients

  • 2 cans butter beans, 15 ounces each, drained and rinsed
  • 2 medium fresh carrots, cut into thin sticks
  • 4 to 5 fresh radishes, thinly sliced
  • ¼ cup fresh mint leaves, roughly chopped
  • ¼ cup fresh cilantro, chopped
  • ⅓ cup roasted peanuts, roughly chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper


Instructions

  1. Drain and rinse the butter beans thoroughly, then place them in a large mixing bowl.
  2. Cut the carrots into thin sticks and slice the radishes thinly.
  3. Chop the fresh mint leaves and cilantro.
  4. In a small bowl, whisk together olive oil, fresh lemon juice, salt, and black pepper until well combined.
  5. Add the carrots, radishes, mint, cilantro, and roasted peanuts to the bowl with the butter beans.
  6. Pour the dressing over the salad.
  7. Gently toss everything together until evenly coated, being careful not to mash the beans.
