- ⅓ cup roasted peanuts, roughly chopped
- 3 tablespoons olive oil

Instructions
- Drain and rinse the butter beans thoroughly, then place them in a large mixing bowl.
- Cut the carrots into thin sticks and slice the radishes thinly.
- Chop the fresh mint leaves and cilantro.
- In a small bowl, whisk together olive oil, fresh lemon juice, salt, and black pepper until well combined.
- Add the carrots, radishes, mint, cilantro, and roasted peanuts to the bowl with the butter beans.
