- 680 grams cream cheese, room temperature
- 200 grams granulated sugar
- 4 large eggs, room temperature
- 240 ml heavy cream
- 200 grams dark chocolate, melted and slightly cooled
- 120 grams cherry preserves
- 1 teaspoon cherry crush seasoning
Instructions
- Preheat oven to 220°C and line a 20 cm springform pan with parchment paper, allowing the paper to rise above the edges.
- In a large mixing bowl, beat the cream cheese and granulated sugar until completely smooth and creamy.
- Add the eggs one at a time, mixing gently after each addition until incorporated.
- Pour in the heavy cream and melted dark chocolate, mixing until the batter is smooth and uniform.
- Place the lined springform pan on a baking tray to catch any drips.
- Pour the batter into the prepared pan.
- Spoon the cherry preserves over the top and gently swirl with a knife.
- Sprinkle the cherry crush seasoning evenly across the surface.
- Bake for 25 to 30 minutes, until the top is deeply browned and the center remains slightly jiggly.
- Remove from the oven and allow to cool at room temperature, then refrigerate for at least 4 hours before slicing and serving.
Notes
- Use room temperature cream cheese to prevent lumps.
- The center should still wobble slightly when removed from the oven.
- Chill thoroughly for clean slices and best texture.
- For cleaner cuts, dip a knife in hot water and wipe between slices.
