Description

A deeply caramelized Basque cheesecake infused with rich dark chocolate and swirled with sweet cherry preserves, finished with a subtle cherry seasoning for bold, balanced flavor.


Ingredients

  • 680 grams cream cheese, room temperature
  • 200 grams granulated sugar
  • 4 large eggs, room temperature
  • 240 ml heavy cream
  • 200 grams dark chocolate, melted and slightly cooled
  • 120 grams cherry preserves
  • 1 teaspoon cherry crush seasoning


Instructions

  1. Preheat oven to 220°C and line a 20 cm springform pan with parchment paper, allowing the paper to rise above the edges.
  2. In a large mixing bowl, beat the cream cheese and granulated sugar until completely smooth and creamy.
  3. Add the eggs one at a time, mixing gently after each addition until incorporated.
  4. Pour in the heavy cream and melted dark chocolate, mixing until the batter is smooth and uniform.
  5. Place the lined springform pan on a baking tray to catch any drips.
  6. Pour the batter into the prepared pan.
  7. Spoon the cherry preserves over the top and gently swirl with a knife.
  8. Sprinkle the cherry crush seasoning evenly across the surface.
  9. Bake for 25 to 30 minutes, until the top is deeply browned and the center remains slightly jiggly.
  10. Remove from the oven and allow to cool at room temperature, then refrigerate for at least 4 hours before slicing and serving.

Notes

  • Use room temperature cream cheese to prevent lumps.
  • The center should still wobble slightly when removed from the oven.
  • Chill thoroughly for clean slices and best texture.
  • For cleaner cuts, dip a knife in hot water and wipe between slices.
