A classic Italian appetizer, Bruschetta with Cheese features toasted bread slices topped with a savory blend of melted cheese, fresh tomatoes, garlic, and basil for a flavorful and satisfying bite.

Ingredients

Scale
  • 1 baguette, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Arrange baguette slices on a baking sheet and brush lightly with olive oil.
  3. Toast in the oven for 5–7 minutes, or until lightly golden.
  4. In a bowl, combine diced tomatoes, minced garlic, basil, salt, and pepper.
  5. Top each toasted bread slice with the tomato mixture.
  6. Sprinkle mozzarella and Parmesan cheese over the top of each slice.
  7. Return to the oven and bake for another 5–7 minutes, or until cheese is melted and bubbly.
  8. Serve warm, garnished with additional basil if desired.

Notes

  • Use fresh, ripe tomatoes for the best flavor.
  • Try other cheeses like feta or goat cheese for variation.
  • For extra crunch, rub toasted bread with garlic before adding toppings.
