- 4 boneless, skinless chicken breasts
- 1 can (14.5 oz) diced tomatoes, drained
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil (or 1 tbsp dried basil)
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp balsamic vinegar (optional)
- 1 tbsp olive oil
- 2 cups seasoned croutons or toasted bread cubes (optional base)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Place chicken breasts in the dish and season with salt and pepper.
- In a bowl, combine diced tomatoes, garlic, basil, balsamic vinegar, and olive oil.
- Spread the tomato mixture evenly over the chicken breasts.
- Sprinkle mozzarella and Parmesan cheese over the top.
- If using croutons, scatter them around the chicken in the baking dish.
- Bake uncovered for 25–30 minutes or until the chicken is cooked through (internal temp 165°F/74°C).
- Serve hot, optionally over pasta or rice.
