Description

Bruschetta Chicken Bake is a flavorful, oven-baked dish featuring juicy chicken breasts topped with a savory tomato, basil, and garlic bruschetta mix, finished with melted mozzarella cheese and served over a bed of croutons or pasta.

  • 4 boneless, skinless chicken breasts
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil (or 1 tbsp dried basil)
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp balsamic vinegar (optional)
  • 1 tbsp olive oil
  • 2 cups seasoned croutons or toasted bread cubes (optional base)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Place chicken breasts in the dish and season with salt and pepper.
  3. In a bowl, combine diced tomatoes, garlic, basil, balsamic vinegar, and olive oil.
  4. Spread the tomato mixture evenly over the chicken breasts.
  5. Sprinkle mozzarella and Parmesan cheese over the top.
  6. If using croutons, scatter them around the chicken in the baking dish.
  7. Bake uncovered for 25–30 minutes or until the chicken is cooked through (internal temp 165°F/74°C).
  8. Serve hot, optionally over pasta or rice.
