- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 3 garlic cloves, minced
- 1 cup mozzarella cheese, shredded or sliced
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil, divided
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400°F and lightly grease a medium baking dish with 1 tablespoon olive oil.
- In a mixing bowl, combine halved cherry tomatoes, minced garlic, chopped basil, balsamic vinegar, remaining 1 tablespoon olive oil, salt, and black pepper. Toss gently to combine.
- Place chicken breasts in the prepared baking dish and season lightly with additional salt and black pepper if desired.
- Spoon the tomato mixture evenly over each chicken breast.
- Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F.
- Sprinkle mozzarella cheese over the chicken and return to the oven for 5 minutes, until melted and slightly golden.
- Remove from oven and let rest for 5 minutes before serving.
