Description

Ingredients

  • 4 medium boneless skinless chicken breasts, about 1 1/2 pounds
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 3 garlic cloves, minced
  • 1 cup mozzarella cheese, shredded or sliced
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat oven to 400°F and lightly grease a medium baking dish with 1 tablespoon olive oil.
  2. In a mixing bowl, combine halved cherry tomatoes, minced garlic, chopped basil, balsamic vinegar, remaining 1 tablespoon olive oil, salt, and black pepper. Toss gently to combine.
  3. Place chicken breasts in the prepared baking dish and season lightly with additional salt and black pepper if desired.
  4. Spoon the tomato mixture evenly over each chicken breast.
  5. Bake for 20 to 25 minutes, or until the internal temperature reaches 165°F.
  6. Sprinkle mozzarella cheese over the chicken and return to the oven for 5 minutes, until melted and slightly golden.
  7. Remove from oven and let rest for 5 minutes before serving.
