- 1 sheet puff pastry, thawed
- 2 medium apples, thinly sliced
- 8 ounces brie cheese, sliced
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon honey
- 1 egg, beaten
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a skillet over medium heat, melt butter and add sliced apples, brown sugar, salt, and black pepper. Cook for 5 to 7 minutes until slightly softened and caramelised. Remove from heat and stir in chopped fresh thyme.
- Lightly roll out the puff pastry and transfer it to the prepared baking sheet.
- Arrange sliced brie in the center of the pastry, leaving a 2 inch border around the edges.
- Spoon the caramelised apples evenly over the brie and drizzle honey over the top.
- Fold the pastry edges over the filling, pleating gently as you go.
- Brush the exposed pastry edges with beaten egg.
- Bake for 25 to 30 minutes until the crust is golden brown and crisp.
- Allow to cool for 10 minutes before slicing and serving.
Notes
- Keep the puff pastry cold until ready to use for the flakiest texture.
- Slice apples thinly so they cook evenly and layer neatly.
- Do not overfill the galette to prevent leaking during baking.
