Description

A rustic Brie and Caramelised Apple Galette made with flaky puff pastry, tender caramelised apples, creamy melted brie, fresh thyme, and a drizzle of honey. Sweet and savory flavors come together in a beautifully golden, free-form tart.


Ingredients

  • 1 sheet puff pastry, thawed
  • 2 medium apples, thinly sliced
  • 8 ounces brie cheese, sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon honey
  • 1 egg, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt butter and add sliced apples, brown sugar, salt, and black pepper. Cook for 5 to 7 minutes until slightly softened and caramelised. Remove from heat and stir in chopped fresh thyme.
  3. Lightly roll out the puff pastry and transfer it to the prepared baking sheet.
  4. Arrange sliced brie in the center of the pastry, leaving a 2 inch border around the edges.
  5. Spoon the caramelised apples evenly over the brie and drizzle honey over the top.
  6. Fold the pastry edges over the filling, pleating gently as you go.
  7. Brush the exposed pastry edges with beaten egg.
  8. Bake for 25 to 30 minutes until the crust is golden brown and crisp.
  9. Allow to cool for 10 minutes before slicing and serving.

Notes

  • Keep the puff pastry cold until ready to use for the flakiest texture.
  • Slice apples thinly so they cook evenly and layer neatly.
  • Do not overfill the galette to prevent leaking during baking.
  • Reheat leftovers in the oven to maintain a crisp crust.
