Description

Breakfast Bacon Cheeseburger Lasagna combines layers of lasagna noodles with seasoned ground beef, crispy bacon, scrambled eggs, and melted cheeses, creating a hearty dish perfect for brunch or dinner.


Ingredients

  • 9 lasagna noodles
  • 1 lb ground beef
  • 6 slices bacon, cooked and crumbled
  • 6 large eggs
  • 2 tbsp milk
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp ketchup
  • 1 tbsp yellow mustard
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions, drain, and set aside.
  2. In a skillet over medium heat, cook bacon until crispy. Remove, crumble, and set aside.
  3. In the same skillet, cook ground beef with onion and garlic until browned. Drain excess grease, then stir in ketchup, mustard, salt, and pepper. Set aside.
  4. In a separate pan, melt butter over medium heat. Whisk eggs with milk, then scramble until just set. Remove from heat.
  5. Grease a 9×13 baking dish. Spread a thin layer of beef mixture on the bottom, followed by noodles.
  6. Layer ricotta cheese, scrambled eggs, beef mixture, bacon, cheddar, and mozzarella.
  7. Repeat layers until ingredients are used, finishing with noodles topped with mozzarella and Parmesan.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
  9. Let lasagna rest for 10 minutes before slicing and serving.

Notes

  • Add sliced pickles or tomatoes between layers for a true cheeseburger flavor.
  • Prepare the dish a day ahead and bake when ready to serve.
  • For extra creaminess, mix a little cream cheese with the ricotta layer.
