Description

Blackberry Cinnamon Swirl Oatmeal Muffins are moist, wholesome muffins made with oats, fresh blackberries, and a sweet cinnamon swirl, perfect for a healthy breakfast or snack.


Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or plant-based)
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/3 cup melted coconut oil or butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blackberries
  • For cinnamon swirl: 2 tbsp brown sugar + 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a bowl, combine oats and milk. Let soak for 10 minutes.
  3. In another bowl, whisk together flours, brown sugar, baking powder, baking soda, salt, and cinnamon.
  4. In the soaked oat mixture, stir in melted oil, egg, and vanilla.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Gently fold in blackberries.
  7. Fill each muffin cup halfway, sprinkle with a little cinnamon swirl mixture, then top with more batter and another sprinkle of cinnamon swirl.
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use frozen blackberries without thawing to prevent bleeding color.
  • Substitute applesauce for oil to reduce fat content.
  • Store in an airtight container for up to 3 days or freeze for longer shelf life.
