Description
Blackberry Cinnamon Swirl Oatmeal Muffins are moist, wholesome muffins made with oats, fresh blackberries, and a sweet cinnamon swirl, perfect for a healthy breakfast or snack.
Ingredients

- 1 cup rolled oats
- 1 cup milk (dairy or plant-based)
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/3 cup melted coconut oil or butter
- 1 egg
- 1 tsp vanilla extract
- 1 cup fresh or frozen blackberries
- For cinnamon swirl: 2 tbsp brown sugar + 1/2 tsp cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
- In a bowl, combine oats and milk. Let soak for 10 minutes.
- In another bowl, whisk together flours, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In the soaked oat mixture, stir in melted oil, egg, and vanilla.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Gently fold in blackberries.
- Fill each muffin cup halfway, sprinkle with a little cinnamon swirl mixture, then top with more batter and another sprinkle of cinnamon swirl.
- Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use frozen blackberries without thawing to prevent bleeding color.
- Substitute applesauce for oil to reduce fat content.
- Store in an airtight container for up to 3 days or freeze for longer shelf life.
