Bison Meatballs are a lean, flavorful alternative to traditional beef meatballs. Made with ground bison, herbs, and spices, these meatballs are perfect for a healthy, protein-packed meal.

- 1 lb ground bison
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1 tablespoon olive oil (for frying)
- 1 cup marinara sauce (optional, for serving)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the ground bison, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, pepper, oregano, and basil. Mix until well combined.
- Form the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
- Bake in the preheated oven for 15-18 minutes, or until the meatballs are cooked through and browned on the outside.
- While the meatballs are baking, heat olive oil in a large skillet over medium heat. If desired, add marinara sauce to the skillet and bring it to a simmer. Once the meatballs are done, transfer them to the skillet with the sauce and simmer for an additional 5-7 minutes to heat through.
- Serve the meatballs with sauce, over pasta, rice, or as a side dish.
Notes
- For a lower-carb version, substitute breadcrumbs with almond flour.
- If you prefer spicy meatballs, add red pepper flakes to the mixture.
- You can make the meatballs ahead of time and store them in the fridge for up to 3 days or freeze for later use.
