- 4 medium russet potatoes, peeled and grated
- 1 small onion, grated
- 2 eggs
- 1/4 cup all-purpose flour
- 2 tablespoons chopped parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil, for frying
- Sour cream, for serving
Instructions
- Peel and grate the potatoes and onion. Wrap in a clean towel and squeeze out as much liquid as possible.
- In a large bowl, combine grated potatoes, onion, eggs, flour, parsley, salt, and pepper. Mix until well combined.
- Heat about 2 tablespoons of vegetable oil in a skillet over medium heat until shimmering.
- Scoop heaping tablespoons of batter into the skillet and flatten slightly with a spatula.
- Fry for 3–4 minutes on each side until golden and crisp. Remove and drain on a wire rack or paper towel.
- Repeat with remaining batter, adding more oil as needed.
- Serve warm with sour cream or applesauce on the side.
Notes
- Squeeze grated potatoes well to avoid soggy fritters.
- Fry in small batches for even browning.
