- ¼ cup lemon juice
- ¼ cup granulated sugar
- 2 tablespoons cornstarch

- ½ cup all-purpose flour
- ½ cup brown sugar
- ½ teaspoon ground cinnamon (for topping)
- ½ cup salted butter, cold
- 1 cup rolled oats
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, toss peaches with lemon juice, granulated sugar, cornstarch, cinnamon, and vanilla extract. Let sit for 5–10 minutes.
- Pour the peach mixture into the prepared baking dish and spread evenly.
- In another bowl, combine flour, brown sugar, oats, and cinnamon. Cut in the cold butter with a fork or pastry cutter until crumbly.
- Sprinkle the topping evenly over the peaches.
- Bake for 40–45 minutes, or until the topping is golden brown and the filling is bubbling.
- Cool for 15 minutes before serving. Serve warm with ice cream or whipped cream if desired.
