Beef and Mushroom Stroganoff is a rich and creamy dish featuring tender beef, earthy mushrooms, and a velvety sauce, served over egg noodles or rice for a comforting meal.

- 1 lb beef sirloin or tenderloin, thinly sliced
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cups mushrooms, sliced (cremini or white button)
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup sour cream
- 1 tbsp Dijon mustard
- 1/2 tsp paprika
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
- Egg noodles or rice (for serving)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3 minutes.
- Add the sliced mushrooms and garlic to the skillet and cook for another 4-5 minutes, until the mushrooms release their moisture and become tender.
- Pour in the beef broth, Dijon mustard, and paprika. Stir to combine, scraping any browned bits from the bottom of the skillet.
- Return the beef to the skillet and simmer for 5 minutes, allowing the flavors to meld together.
- Lower the heat and stir in the sour cream. Cook for another 2-3 minutes, until the sauce is smooth and heated through. Season with salt and pepper to taste.
- Serve the stroganoff over cooked egg noodles or rice, garnished with fresh parsley.
Notes
- If you prefer a thicker sauce, simmer the broth for a few extra minutes before adding the sour cream.
- For a lighter version, you can substitute the sour cream with Greek yogurt or a combination of sour cream and light cream cheese.
- This dish pairs perfectly with a side of steamed vegetables or a simple salad.
