Description

Beef and Mushroom Stroganoff is a rich and creamy dish featuring tender beef, earthy mushrooms, and a velvety sauce, served over egg noodles or rice for a comforting meal.


Ingredients

  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cups mushrooms, sliced (cremini or white button)
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Egg noodles or rice (for serving)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  2. In the same skillet, add the chopped onion and cook until softened, about 3 minutes.
  3. Add the sliced mushrooms and garlic to the skillet and cook for another 4-5 minutes, until the mushrooms release their moisture and become tender.
  4. Pour in the beef broth, Dijon mustard, and paprika. Stir to combine, scraping any browned bits from the bottom of the skillet.
  5. Return the beef to the skillet and simmer for 5 minutes, allowing the flavors to meld together.
  6. Lower the heat and stir in the sour cream. Cook for another 2-3 minutes, until the sauce is smooth and heated through. Season with salt and pepper to taste.
  7. Serve the stroganoff over cooked egg noodles or rice, garnished with fresh parsley.

Notes

  • If you prefer a thicker sauce, simmer the broth for a few extra minutes before adding the sour cream.
  • For a lighter version, you can substitute the sour cream with Greek yogurt or a combination of sour cream and light cream cheese.
  • This dish pairs perfectly with a side of steamed vegetables or a simple salad.
