Description
Banana Bars are soft, moist dessert squares made with ripe bananas and topped with a luscious cream cheese frosting. They’re perfect for using up overripe bananas and make a great snack or dessert.

- 1/2 cup (115g) unsalted butter, softened
- 1 1/2 cups (300g) granulated sugar
- 2 large eggs
- 1 cup (240ml) sour cream
- 1 tsp vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2 medium ripe bananas, mashed (about 1 cup)
- 8 oz (225g) cream cheese, softened (for frosting)
- 1/4 cup (60g) unsalted butter, softened (for frosting)
- 2 cups (240g) powdered sugar (for frosting)
- 1 tsp vanilla extract (for frosting)
Instructions
- Preheat oven to 350°F (175°C). Grease a 10×15-inch baking pan.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs, sour cream, and vanilla; mix until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture. Stir in mashed bananas.
- Pour batter into the prepared pan and spread evenly.
- Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
- For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla; mix until creamy.
- Spread frosting over cooled bars, cut into squares, and serve.
Notes
- Use very ripe bananas for best flavor and moisture.
- Add chopped walnuts or chocolate chips to the batter for variation.
- Refrigerate leftovers in an airtight container for up to 5 days.
