Description

Banana Bars are soft, moist dessert squares made with ripe bananas and topped with a luscious cream cheese frosting. They’re perfect for using up overripe bananas and make a great snack or dessert.


Ingredients

  • 1/2 cup (115g) unsalted butter, softened
  • 1 1/2 cups (300g) granulated sugar
  • 2 large eggs
  • 1 cup (240ml) sour cream
  • 1 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 medium ripe bananas, mashed (about 1 cup)
  • 8 oz (225g) cream cheese, softened (for frosting)
  • 1/4 cup (60g) unsalted butter, softened (for frosting)
  • 2 cups (240g) powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 10×15-inch baking pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs, sour cream, and vanilla; mix until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture. Stir in mashed bananas.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  8. For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla; mix until creamy.
  9. Spread frosting over cooled bars, cut into squares, and serve.

Notes

  • Use very ripe bananas for best flavor and moisture.
  • Add chopped walnuts or chocolate chips to the batter for variation.
  • Refrigerate leftovers in an airtight container for up to 5 days.
