Description

Baked Salmon Sushi Cups are a creative twist on traditional sushi, featuring crispy cups made from seasoned rice, filled with flavorful baked salmon, and topped with creamy avocado and a drizzle of spicy mayo.


Ingredients

  • 2 cups cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 lb salmon fillet, skin removed
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon lemon juice
  • 1 avocado, sliced
  • 1 tablespoon sesame seeds
  • 1/4 cup mayonnaise
  • 1 teaspoon sriracha sauce
  • 1 tablespoon chopped green onions
  • 1 sheet nori, sliced into thin strips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin and set aside.
  2. In a small bowl, mix the cooked rice with rice vinegar, sugar, and salt. Stir until the rice is well seasoned.
  3. Press the seasoned rice into each muffin cup, packing it tightly to form small rice cups. Bake in the oven for 12-15 minutes, or until the rice is crispy and golden.
  4. Meanwhile, season the salmon fillet with olive oil, soy sauce, sesame oil, and lemon juice. Bake in the oven for 12-15 minutes, or until the salmon is cooked through and easily flakes with a fork.
  5. Once the salmon is done, remove it from the oven and break it into small pieces.
  6. In a small bowl, combine the mayonnaise and sriracha sauce to make the spicy mayo.
  7. To assemble, spoon a few pieces of baked salmon onto each rice cup. Top with avocado slices, a drizzle of spicy mayo, sesame seeds, and chopped green onions. Garnish with nori strips if desired.
  8. Serve immediately and enjoy!

Notes

  • You can substitute the salmon with tuna or shrimp for variety.
  • If you prefer a milder version, reduce the amount of sriracha in the spicy mayo.
  • These cups are best served fresh but can be stored in an airtight container in the fridge for a few hours.
